Why http://ift.tt/2lpYQP7 modifies block header data resetting nonce to "0"?

why

http://ift.tt/2lpYQP7

modifies historic block header data for every block, resetting nonce to "0" ?

It is not fair since I exactly need real, unmodified block header data as input into mining simulator demo for students.

Any idea ?

thank you
